Combine the butter, basil, and salt and pepper to taste in a food processor and blend until smooth. Pack the mixture into a medium ramekin, cover with plastic wrap and refrigerate for at least 30 minutes...

Sea Food Platter: Fish/ Prawns/ Crab Calamari/ Lobster with Chips & Salad or Vegetable Rice.

Place the shallots, vinegar, and sugar in a small saucepan and bring to a boil. Cook uncovered for 1 minute. Remove from the heat and allow to cool to room temperature. Add the pepper and herbs and serve with the raw oysters...

Garlic Steaks: Served with Mash Potatoes and Salad....

After putting the grill on high and letting it warm up, then put the steak and tomatoes (which we smothered with left over steak marinade, olive oil and some vegetable seasoning) on, cooking them for around 5 minutes on each side...

Jambo Prawns: Grilled or Boiled served with Chips and Salad.

Heat a large frying pan and add the marinated prawns, cook over a high heat for 3-4 minutes, just until the shells of the prawns turn pink. Remove the prawns from the frying pan and pour any excess juices over the prawns...

Chilly Crab served with Vegetable Rice, Chips and Salad.

Mix the ketchup, chili paste, oyster sauce, soy sauce, and tamarind paste; thin it with 1/4 cup water and set aside.  Add the scallion, ginger, garlic, 1/2 the chile, and cilantro and cook for 1 minute. Add the crab and stir-fry for another minute. Pour in the sauce and continue cooking...

Calamari - Grilled/ Boiled/ Fried served with Chips and Salad or Boiled Vegetable.

Add olive oil, lemon juice, oregano, garlic, salt, and red pepper flakes. Add the squid bodies and tentacles, toss to coat, and marinate for 2 hours, refrigerated, Then lightly coat both sides of the sliced bread with olive oil. Place the bread on the hot grill and cook until golden brown on both sides...

Fish Picata served with Chips and Salad.

While the pan is heating, blot the fish dry with paper towels and season with salt and pepper. Saute the fish in the oil until just cooked. Add the lemon juice and capers and stir. Add the butter and stir or whisk to incorporate to bring the sauce together. Pour onto the fish and garnish with the chopped parsley....
